8 ounces Chisholm Trail Grass-fed Ground Beef

1 tablespoon olive oil

1 teaspoon creole seasoning

1/2 teaspoon chili powder

1/2 teaspoon cumin

Salt & pepper, to taste

2 tablespoon butter
-
1/2 small onion, diced
-
2-4 jalapenos, stems & membrane removed, diced
-
3 cloves of garlic, minced
-
2 tomatoes, cored and diced
-
2 tablespoons flour
-
1 1/2 cups milk
-
3 cups Colby jack cheese, shredded
-
3 cups Monterrey jack cheese, shredded
-
1/2 cup sour cream
-
Your favorite tortilla chips

Preparation
Step 1 - Heat olive oil in a saucepan over medium-high heat. Add ground beef, creole seasoning, chili powder, cumin, salt and pepper.
Step 2 - Cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks. Remove beef to drain fat and wipe pan clean with a dishcloth.
Step 3 - Turn heat down to medium and melt butter. Add diced onion and jalapenos; saute for 5 minutes, until onion is translucent. Add tomatoes and garlic and continue to sauté for another minute.
Step 4 - Sprinkle flour onto vegetable mixture, and mix together with a whisk.
Step 5 - Slowly add milk, stirring constantly after each addition, until all milk has been incorporated and most lumps are gone.
Step 6 - Mix in cooked grass-fed ground beef to cheese sauce. Add more salt and pepper if needed.
