Grass-fed Strip Steak with Chimichurri Sauce

Ingredients

  • 1 cup packed, chopped fresh cilantro and/or parsley leaves. Add chopped fresh oregano leaves if desired      

  • 4-5 cloves garlic, minced   

  • ¼ cup red onion, finely diced   

  • ¼ cup fresh lime juice or red wine vinegar     

  • ½ cup olive oil

  • Chisholm Trail NY Strip Steaks

Preparation

Step 1 - Combine the chimichurri ingredients. Mixing by hand will result in a better texture.

 

Step 2 - Bring grill to high temperature, in the 500-degree range, for initial sear.

 

Step 3 - Season Chisholm Trail NY strip steaks with kosher salt and fresh cracked pepper.

Step 4 - Place steaks on hot grill and sear on both sides for 1 ½ to 2 minutes.

 

Step 5 - Lower heat to 325 - 350 degrees. Cook each side about 3 minutes (rare) to 4 minutes (medium rare).

 

Step 6 - Remove steaks from heat, cover and let rest for 5 – 7 minutes. Top with chimichurri and serve.
