Ingredients

1 ½ lb. Chisholm Trail Italian Sausage

1 bell pepper, chopped

1 large onion, chopped

2 cloves garlic, minced

1 (28 oz) can chopped tomatoes

½ cup chopped fresh parsley

2 tsp dried basil
-
8 cups chicken broth
-
1 cup Orzo pasta
-
1 (10 oz) package frozen chopped spinach, thawed and drained
Preparation
Step 1 - Place sausage in large skillet over medium heat, cook until evenly browned.
Step 2 - Remove from skillet and crumble into large pot. Add bell pepper, onion, garlic and tomatoes with their liquid. Stir in parsley, basil, and broth.
Step 3 - Cover, place over medium heat and bring to a boil.
Step 4 - Reduce heat to low and cook for 30 minutes.
Step 5 - Stir in orzo and spinach and cook until orzo is al dente.
Step 6 - Serve with grated parmesan cheese.
